Strawberry-Topped Puffy Pancake with Creamy Orange Filling

Ingredients: 1 1/2 cups cottage cheese, 1/4 cup frozen orange juice concentrate, thawed, 2 tablespoons powdered sugar, 2⁄3 cup skim milk, 1/2 cup all-purpose flour, 1 tablespoon honey, 1 teaspoon fresh lemon rind, grated, 2 eggs, vegetable oil cooking spray, 2 1⁄3 cups fresh strawberries, halved

Directions: In blender, combine first three ingredients, cover and process until well-blended. Pour into a bowl and set aside. In blender, combine milk and next four ingredients. Cover and process until smooth. Pour this into a 9-inch cooking-spray-coated pie plate. Bake in a 425 F oven for 15 minutes. Spoon cottage cheese onto pancake.Layer with strawberries.

Wine Pairing

Recommendation: 2008 Moscato d’Asti ($18)

While pairing wine and strawberries may be quite rare, it can be done. Most importantly, you want a wine featuring some residual sugar and a brightness to match the dishes typically featuring strawberries. A Muscat like Moscato d’Asti contains sweet pineapple and floral notes lifted by the wine’s wonderful acidity and lightness. Available in specialty shops and online.
