Crust pizzeria to reopen April 2 as Fat Dan’s Deli

Crust Pizzeria Napoletana at 840 W. Main St. in Carmel has closed but will soon re-open as a Fat Dan’s Deli, specializing in Chicago-style food.

Fat Dan’s Deli owner Dan Jarman, who owns two other Fat Dan’s in Indianapolis, said he bought Crust with the intention of turning it into a third Fat Dan’s.

“I have a pretty strong brand as Fat Dan’s,” Jarman said. “To be able to expand that brand up north is very appealing to me.”

Chicago-style cuisine includes things like Italian beef sandwiches, hot dogs and smoked meats, according to Jarman.

“It’s the blue-collar stuff, the quick and easy street foods,” he said. “When I think of Chicago, I always think of baseball and having an Italian beef sandwich and a hotdog at the game.”

Jarman bought Crust from former owners Dustin and Azin Brown on Feb. 18. What appealed to him most was the restaurant’s large pizza ovens. Jarman plans to use them to create pizzas and calzones not available at other Fat Dan’s Deli locations.

“We’ve altered some of the recipes of the pizzas and calzones, and we will still serve those,” he said.

Jarman has tried to retain as many of Crust’s employees as possible.

“I told them that we’re keeping everybody here, if you want to stay and work with us,” he said. “We gave everybody that opportunity, and several of them have taken it.”

Jarman wants to get staff back to work as soon as possible. He is aiming for an opening date of April 2.
