Agave Bar and Grill to expand in Fishers

Agave Bar and Grill, owned by sisters Cynthia Zimla and Evelyn Veloz, is expanding with a restaurant in downtown Fishers. The restaurant, at 8800 North St., Suite 100, will be on the first floor of the Spark Apartments mixed-use building.

“It was always our dream to open a second location,” Zimla said. “We drove around for six or seven months to find the right spot until we finally stumbled upon the Spark Apartments.”

The original restaurant is at 31 E. Main St. in Carmel.

Improvements are under way for the new location, which is 1,800 square feet with an elevated patio.

“We’ve been working with an amazing team of architects,” Zimla said. “We have the schematic design already set, and we’re working with an interior designer to bring the restaurant to life. We’re going to have bright colors, the Mexican colors, the Mexican skulls and all that.”

The Fishers restaurant will feature authentic Mexican food from recipes passed down through generations. There also will be a full tequila bar. Agave Bar and Grill is partnering with Patron Tequila to create exclusive cocktails.

“At the Carmel location, (Patron Tequila) works side-by-side with the mixologists to create drinks and special cocktails for us,” Zimla said. “That’s exactly what we’re going to do at the Fishers location. We’ll work with the mixologists and craft together drinks that only the Fishers location is going to have available to the community.”

Agave Bar and Grill is targeting a March 2020 opening in Fishers. 

“We’re a women-owned restaurant, and we’re trying to make it in this industry,” Zimla said. “Family is what motivates us to keep going. We stick together through all of the obstacles that this industry brings. We hope everyone loves the food that we bring and that we continue to grow in the community.”
